Easy Arugula Salad
Salmon and goat cheese. One of my favorite combinations. Really I would be cool with just the goat cheese, but you can’t wrong with salmon either. I’m not a huge salad person. Being a home chef, I’d rather cook something for real than throw some random veggies together over lettuce and call it a meal. But I have to say, this salad is a winner. It’s light, tangy and loaded with protein and flavor. I can promise this salad becomes one of your favorites after the first bite.
Salmon and Goat Cheese Arugula Salad
Ingredients
Salmon
- 1 small Salmon Filet (about 3-4oz)
- 2 tbsp Lemon Juice
- ½ tsp Salt & Pepper
- ½ Lemon (zested)
Salad
- 2 cups Arugula
- 2 oz Goat Cheese (softened)
- ½ Avocado (cubed)
- 1 Radish (sliced thin)
- 8-10 Cherry Tomatoes (halved)
Dressing
- ½ cup Olive Oil
- ⅓ cup Lemon Juice
- ½ tsp Salt & Pepper
Instructions
- Preheat the oven to 400°. Season salmon filet with lemon juice/zest and salt/pepper. Bake for 8-10 minutes skin side down or until salmon is cooked through.
- While the salmon cooks. Prep vegetables and assemble the salad. Mix dressing ingredients and stir thoroughly.
- Pick salmon apart with a fork and add to the salad. Serve immediately and enjoy!
The Easiest Arugula Salad Dressing
Only four ingredients and damn delicious. All you need is:
1. Olive Oil
2. Lemon Juice
3. Salt
4. Pepper
That’s it. Tangy and fresh and perfect with an arugula salad. Even better with the salmon on top because of course every piece of fish needs fresh lemon.
