Salmon and Goat Cheese Arugula Salad

A fresh arugula salad with salmon, goat cheese, avocado and all the healthy goods you could want.

Salmon
- 1 small Salmon Filet (about 3-4oz)
- 2 tbsp Lemon Juice
- ½ tsp Salt & Pepper
- ½ Lemon (zested)
Salad
- 2 cups Arugula
- 2 oz Goat Cheese (softened)
- ½ Avocado (cubed)
- 1 Radish (sliced thin)
- 8-10 Cherry Tomatoes (halved)
Dressing
- ½ cup Olive Oil
- ⅓ cup Lemon Juice
- ½ tsp Salt & Pepper
Preheat the oven to 400°. Season salmon filet with lemon juice/zest and salt/pepper. Bake for 8-10 minutes skin side down or until salmon is cooked through.
While the salmon cooks. Prep vegetables and assemble the salad. Mix dressing ingredients and stir thoroughly.
Pick salmon apart with a fork and add to the salad. Serve immediately and enjoy!
