A Simple Twist on A Classic
If you’re anything like me, you’ve probably eaten hundreds of salads in your lifetime. One of my favorites has always been a classic cobb salad. Especially when I was younger, the only way you could get me to eat a salad is was to load it up with eggs, bacon and cheese. Simple, right? Well as I’ve gotten older, I’ve learned to appreciate vegetables and real salads that have actual nutritional value (crazy concept right)? This citrus salmon cobb salad is going to be your new favorite salad, I guarantee it.
Why Salmon?
The classic cobb salad has chicken. But let’s be real, how many chicken salads can one person eat before they go insane. I love salmon because it naturally goes well with my entire concept– gourmet the lazy way. You can sear it, bake it, grill it, cook it however your heart desires. But no matter how you prepare it, you’re going to end up with a tasty (and healthy) piece of fish. Not only that, but you really only need some salt, pepper and fresh lemon to prepare it. Perfect for a low key chef!
Simple Citrus Dressing
As I already mentioned, this isn’t your classic cobb salad that would normally be smothered in blue cheese or ranch dressing. We’re using salmon which means you need citrus. Every piece of fresh fish needs fresh lemon juice, and this is no exception. The quick dressing I threw together has lemon juice, olive oil, some fresh herbs and spices. This entire dish shouldn’t take you more than 20 minutes to make and it’s going to look beautiful on the table. I bet it even looks so good that the entire family will want to sit down and dig in. Citrus Salmon Cobb Salad
Ingredients
For The Salad
- 1 Large Salmon Filet
- 2 Eggs (hard boiled)
- ½ Cucumber (diced)
- ¼ Red Onion (diced)
- 3 Strips Bacon
- 1 Avocado (halved and diced)
- ½ Cup Cherry Tomatoes (halved)
- 1 tbsp Olive Oil
- 1 tbsp Lemon Juice
- Pinch Salt and Pepper (enough to season the salmon)
For The Dressing
- 4 tbsp Lemon Juice (about 1½ large lemons juiced)
- 3 tbsp Olive Oil
- 1 tsp Salt
- ½ tsp Pepper
Instructions
- Preheat the oven to 450°
- Coat a baking sheet with cooking spray or a splash of olive oil. Season salmon with salt, pepper and lemon juice on both sides. Place salmon skin side down on the baking sheet. Place the bacon on the other half of the baking sheet. Cook for 5-7 minutes and check on the bacon (it'll be done before the salmon). Once the bacon is ready remove from the baking sheet and set aside. Continue baking the salmon until cooked through (should be 12-15 minutes total).
- Well the salmon cooks, dice your vegetables and hard boiled egg and place in your serving bowl (see image).
- Once the salmon is finished cooking, break it apart with a fork into smaller pieces (similar to shredding chicken). Place in serving bowl.
- Combine all dressing ingredients and serve immediately with the salad.
