Gluten Free Lasagna Roll-Ups with a Red Vodka Alfredo SauceOne of my first “fancy recipes” back in college was chicken Alfredo lasagna roll-ups. I had seen something similar on Pinterest and gave it a shot. Turns out lasagna roll-ups are a great way to switch up your typical pasta dishes and turn them into a gourmet meal.

Turkey Sausage is one of my favorite proteins to use in my dishes. My preference is the 14oz hardwood smoked turkey sausage from Jennie-O. It has so much natural flavor and it only takes a few minutes to cook up in a fry-pan. When you throw in some vegetables, a quick stir-fry with one 14oz turkey sausage is plenty of food to feed four hungry people. That’s tough to beat considering it’s only about $3 at the grocery store.

Since the turkey sausage has so much natural flavor I didn’t want to do anything crazy to this dish. I decided to add a full green bell pepper and half of a white onion and that’s really all it needed. The only spices I added were some salt and pepper, and some cayenne pepper to add the heat and I was done. The cayenne pepper mixed with the natural flavor of the turkey sausage made for a great filling for the lasagna roll-ups.

I thought about making my own red vodka alfredo sauce for this dish but eventually decided against it. My theme is all about simplicity and providing easy dishes for everyday people to cook at home. This led me to using one of my favorite pre-made sauces which is the Classico Red Vodka Alfredo sauce. It ranges from $2-4 depending on what grocery store you shop at. If this sauce isn’t quite your style than it’s easy to replace with your favorite pre-made Alfredo sauce. Or if you’re feeling adventurous you can try making your own sauce.

Keeping in the spirit of creating a gluten free option for all of my dishes, I used gluten free lasagna noodles from Sprouts for my spicy turkey sausage & pepper lasagna roll-ups. Anyone that eats gluten free products on a regular basis knows that gluten free pasta has it’s own taste. It’s not better or worse in my opinion, just different. If you’re not necessarily looking for a gluten free recipe then by all means use regular lasagna noodles.

Spicy Turkey Sausage & Pepper Lasagna Roll-ups

Ingredients
  1. 1 Box of Gluten Free Lasagna Noodles (or regular lasagna noodles depending on preference)
  2. 1 14oz Turkey Sausage
  3. 1 Green Bell Pepper (diced)
  4. 1/2 White Onion (diced)
  5. 1 Cup Shredded Mozzarella Cheese
  6. 1 tbsp Cayenne Pepper
  7. 1 tsp Salt
  8. 1 tsp Pepper
  9. 1 tbsp Olive Oil
  10. Cooking Spray
Instructions
  1. Start by pre-heating the oven to 400 degrees. Then heat 4 cups of water in a large pasta pot over high heat. (quick tip to heat the water faster--microwave the water for 2 minutes in a microwave safe bowl before adding to the pot on the stove). Once the water starts to boil add 10 lasagna noodles. (you'll only be using 8 noodles for the dish but it's nice to have a couple backups incase one of the noodles breaks).
  2. While the water is heating up, cut the turkey sausage into thin slices. Dice the green bell pepper and onion. Add all three to a fry-pan over medium-high heat with 1 tbsp of olive oil. Once those three ingredients are in the pan, add salt, pepper and cayenne pepper mixing thoroughly. (cook 3-5 minutes or until the turkey sausage slices start to brown).
  3. The Noodles and the filling should be done at about the same time. The noodles and sausage don't have to be 100% cooked through (it'll finish in the oven). Lay noodles flat on a counter and spread a small hand full of filling on each noodle. Roll them up and place them on an oven-safe baking dish coated with cooking spray.
  4. Bake at 400 degrees for 12-15 minutes or until everything is cooked through. (after 15 minutes it will be easily be cooked through).
  5. Place two roll-ups on each plate as seen in the picture and cover them in the Alfredo sauce. Top that with the shredded cheese.
  6. Serve hot and Enjoy!
