This has to be one of the easiest dishes I have ever made. Funny enough, the only reason this dish turned out the way it did is because I forgot half of my shopping list. I was originally planning on making a shrimp scampi pasta because I’ve been wanting to try a pasta dish for a while now. Fortunately, I got distracted and forgot the pasta and the lemon so I had to find a way to make something with what I had. One of my favorite shows is Chopped on the Food Network so this was the perfect challenge for me. The premise of the show is that the contestants get a bag of random ingredients and make a gourmet meal with whatever they’ve got.
So I had almost one pound of shrimp, cherry tomatoes and a small jar of pesto sauce. I always have garlic handy so I decided add some garlic and make a simple Italian inspired dish. Pan fried cherry tomatoes have been one of my favorite ingredients ever since I started cooking because they’re so versatile. If you just fry them for a few minutes they soften up enough to be a great side for any sort of protein dish. Or, if you cook them a little longer they get even softer and almost mushy but they keep their sweet flavor. My original thought was to just soften them up and serve them as a side but then I thought I’d try a sauce mixing the tomatoes with the pesto. It turned out to be a home run as this garlic pesto shrimp only took 15 minutes to make and it only requires 5 simple ingredients. This dish is gluten free and damn healthy overall. If you’d like to make this a pasta dish you could easily throw this garlic pesto shrimp over some linguini and it would be just as delicious.
- 1 lb. Uncooked shrimp
- 10 oz. Package of cherry tomatoes
- 1 Clove Garlic
- 3 oz pre-made pesto
- 2 Tbsp Olive oil
- Cut all of the cherry tomatoes in half and mince garlic. Set aside.
- Remove the outer shell from all of the shrimp and place in a frying pan with 1 Tbsp of olive oil over medium-high heat.
- Place cherry tomatoes and garlic in a saute pan or wok with 1 Tbsp olive oil over medium heat.
- Once the shrimp is cooked through (4-7 minutes), dump the shrimp into the saute pan with the tomatoes and garlic and mix together.
- Add the pesto and stir until everything is combined. The juice from the tomatoes should mix with the pesto create a slightly runny sauce.
- Serve immediately and enjoy!
