I have been a huge fan of Chipotle ever since I was a teenager. Back then, I would load my Chipotle burrito up with everything including steak or chicken, rice and beans, salsa, sour cream, guacamole and cheese. Every bite was like a small slice of heaven and I felt like I could eat one of those burritos every day and never get sick of it. This gourmet copycat Chipotle steak bowl is loaded with flavor and is insanely easy to make. So many people think that cooking something that looks and tastes like one of their favorite foods is impossible to make. In reality however, it is so much easier and you can probably make it at home in less time than it would take you to drive to Chipotle, wait in line, order and pay for your food, and finally drive home before eating.
Well, times have changed and I’m not a teenager stuffing my face with giant Chipotle burritos anymore. Thankfully I turned into one hell of cook and I found a way to make my own Chipotle bowl or burrito at home.
Making this dish at home allowed me to add so much additional flavor. Like most of my dishes, a little spice transforms a few simple ingredients into a dish that rivals a gourmet restaurant. I decided to add some fresh lime juice over the top of the bowl and it added a subtle freshness to the entire thing. This is also why I recommended you not overdoing the lime juice in the guacamole. Every ingredient in my copycat Chipotle steak bowls can be left out if necessary to make it vegetarian, vegan or paleo depending on your preference or diet.
- 1 lb. Beef shoulder cut or your favorite steak/chicken/pork
- 1/3 Cup sweet corn
- 1/2 can black/pinto beans (your preference)
- 2 limes
- 1 Cup minute rice
- 2 Small roma tomatoes
- 1/3 Cup red onion
- 2 Hass avocados
- 1 Clove garlic - minced
- 2 Tbsp Sour cream
- 1/4 Cup mozzarella cheese
- 1 Tbsp Salt
- 1 Tbsp chopped cilantro
- 1/2 Tsp black pepper
- 1 Tbsp Olive oil
- Coat steak lightly with olive oil and 1/2 tsp salt/pepper.
- Cook steak in a frying pan on the stovetop over medium heat until medium rare.
- Start minute rice by cooking to box instructions.
- While the steak is cooking, mash avocados in a bowl then add and mix 1/2 Tbsp salt, lime juice from 1 lime, half of your onions and the garlic clove.
- Combine the remaining onions with cilantro and chopped tomatoes.
- Once the steak is done, remove from heat and chop into cubes.
- Place half of your rice in a bowl, lay black beans over the rice, add guacamole over the beans, add the corn and tomato mix over the guacamole, add sour cream and cheese over everything.
- Squeeze 1/2 of a lime over everything.
- Serve and Enjoy!
