Chicken Caesar Pitas - Low Key Cooking

When is the last time you were on your way home from school or work at the end of a long day and started thinking about what you were going to eat for dinner? Maybe then thought to yourself, if it takes longer than 10 minutes to make, it ain’t happening tonight. Well, if you’re anything like me, this is a regular occurrence. Good news for you is, you’re reading this post so you’re about to have a great dinner recipe that you can make faster than a frozen Digiorno pizza. These delicious chicken caesar pitas cost about the same as that frozen pizza, and you can make them in less than 10 minutes.

Time:

  • Prep – 2 minutes
  • Cooking – 8 minutes
  • Plating – 2 minutes

Cost:

  • If you buy the gluten free pitas it’ll be a few dollars more but everything you need can be found for no more than $5-10.

What You’ll Need:

  • 1 lb uncooked chicken breast (thinly sliced if possible)
  • 1 clove garlic
  • 1 head of romaine lettuce or 1 bag of pre-cut romaine lettuce
  • 1/8 cup grated parmesan cheese (they can help you at the deli counter)
  • 4 medium size pitas (they have gluten free pitas at Trader Joes)
  • Your favorite caesar dressing (3-4 tbsp)
  • Salt and pepper
  • 1 tbsp olive oil

Directions:

Start by mincing your garlic clove and add 1 tbsp of olive to a saute pan over medium heat. Season your chicken lightly on both sides with salt and pepper and add the chicken and garlic to the pan flipping occasionally until cooked through (5-7 minutes). While the chicken is cooking, combine lettuce and dressing in a medium size mixing bowl. Once the chicken has finished cooking, remove the pan and slice it into strips. Add the chicken to your mixing bowl and combine until everything has some dressing on it. Throw the pitas in the microwave for 30 seconds, then take a handful of chicken and lettuce and fill each pita. Finally top with your parmesan cheese.

Plating:

Nothing too crazy here. The important thing is to soften your pitas in the microwave before filling (it makes a big difference). Serve and enjoy!
